Indonesian Cod with Noddles

Ingredients: 2 People
300g / 10oz of frozen cod fillet
125g / 4.5oz of button chestnut mushrooms (halved)
1 Romano pepper
3 cloves of garlic
2 pinches of sea salt
1 tablespoon of vegetable oil
1 tablespoon of Sesame seed oil
3 tablespoons of Ketjap Manis (Indonesian Soy Sauce) or light soy sauce
2 person portion of straight to the wok noodles
Method
- Pre-heat over to 200c / 390f. Cut the Romana pepper lengthwise in half and remove all seeds . Brush the inside of the pepper with vegetable oil, add a sprinkle of sea salt to each half, then added sliced garlic. Put in oven to roast for 15 mins
- Halve the mushrooms and cook in a dry wok (this will remove water and intensify the flavour). Then remove from the heat.
- Put the cod in a microwavable dish and cook as per the packet instruction, but should be around 6 mins.
- Remove the pepper from the oven. Scrape off the garlic and crush into the oil that has gather on the bottom of the dish. Cut the pepper into bit sized pieces. Add the garlic/oil mix and the sliced pepper to the wok with the mushrooms. Add the sesame oil and then the noodles. Then add the Ketjap Manis or Soy Sauce
- Flake the cod and add to the wok. Gently mix everything together and return to heat.
- Once hot serve. (2-4 mins approximately)
